Pecan Pretzel Snack Mix
Do not be fooled by the simplicity of this snack mix. It is so tasty and addictive that it will not stay in your kitchen for very long. This would be great as a snack with a cheese platter at a holiday soiree or put in a small baggie to fuel your next hike. Feel free to double the recipe or tailor it to your liking.
Ingredients
2 cups of whole pecans
2 cups of unsalted mini pretzels
1/4 cup of olive oil
1 tbsp of dijon mustard
1 tbsp of maple syrup
1/4 tsp of garlic powder
1/4 tsp of smoked paprika
2 tsp of fresh thyme
salt and pepper
Turn oven to 350F. Get a large sheet pan out and 2 bowls (1 large and 1 small). Put the pecans and pretzels into the large bowl. Mix the rest of the ingredients in a small bowl - except the salt and pepper, whisk well to combine. Pour the oil mixture over the pretzel and nut mix, use clean hands to coat snack mix well. Spread snack mix on sheet pan evenly, season with salt and pepper. Bake in oven for 12-15 minutes. Check mix halfway through to make sure the mixture is not burning and stir with spatula. Let snack cool a little bit on the sheet pan before serving. Keeps at room temperature 5-7 days, but I don’t think it will last that long.
