Pecan-Rum Pie with Rum Butter Caramel Sauce

Here is a pie for any holiday festivity that will hands down, be a showstopper. It just tastes really good, and although you cannot taste the rum, it gives the pie a complexity and depth of flavor. If you are short on time use a store bought pie crust, but if you have a bit of time, try making my all butter pie crust.

Ingredients

Pie crust rolled out into 9 inch pie pan

6 tbsp unsalted butter

4 eggs

1 cup of packed brown sugar

1/4 cup light corn syrup

1.5 tsp of vanilla extract

2 cups of pecans, chopped in half

1/4 cup of rum, can be light or dark

Preheat oven to 350F. In a saucepan over low/medium heat melt butter and mix in brown sugar, corn syrup, vanilla and rum. Just whisk until incorporated and then take off heat. In a separate bowl, beat eggs. Make sure sugar and rum mixture has cooled down before incorporating with eggs. Make sure you are whisking well when incorporating the eggs into the sugar mixture so you don’t have scrambled eggs. Take your pie crust (in its pan) and put the chopped pecans into it, pour custard on top. I like to sprinkle a little bit of coarse salt on top, but thats up to you. Bake pie in center rack until done, or about 35-40 minutes, whenever the filling has set and the edges have browned. Let cool for at least 30 minutes before eating.

You can serve it with whipped cream, and for extra oomph add a caramel rum sauce to really knock your socks off!

Caramel Rum Butter Sauce

1/4 cup of granulated sugar

2oz of salted butter

1/4 cup of heavy whipped cream

1/4 cup of rum

Put the sugar in a sauce pan and heat over medium heat, when sugar has cooked to a rich auburn color take sauce pan off of heat, add heavy cream. The mixture will bubble vehemently so be careful. Mix caramel with a whisk, put back on the heat and when the mixture settles add the 1/4 cup of rum - IF YOU HAVE A GAS BURNER ADD THE ALCOHOL OFF THE FLAME SO YOU DO NOT BURN YOURSELF OR START A KITCHEN FIRE!!! Keep whisking mixture and when every thing is incorporated add the butter off the heat and whisk until you have a deep caramel sauce. Drizzle over this pie, ice cream or even waffles for a very decadent treat!!
