Pumpkin Granola

This recipe is super easy, not too sweet like other granolas, and tastes like pumpkin. Sometimes recipes with pumpkin add too much spice, then you cannot taste the pumpkin flavor. The key to this recipe is to use little spice and let the organic pumpkin flavor shine.

Ingredients

1/3 c. organic pumpkin (I used canned)

1/4 c. vegetable oil

1/4 c. sugar (can substitute with brown sugar or brown rice syrup)

1 tsp pure vanilla extract

pinch of salt

1/8 tsp cinnamon

2 c. oats

1/3 c. pumpkin seeds

Pre-heat oven to 300F (290F if your oven has the capabilities), and prep a sheet pan with parchment. In a heavy saucepan mix the pumpkin, sugar, oil, salt, vanilla, and cinnamon. Cook over low/medium heat for 5 minutes, until sugar has dissolved. Turn off heat, add in oats and pumpkin seeds. Mix well to coat oats, then spread onto a baking sheet.

Let the granola cook for 35 minutes. You will need to toss the granola at least once to prevent uneven browning. Let the granola cool to room temperature on the sheet pan before putting into a container. Will keep for about a week.
