Vegan Palmiers

These cookies, which are shaped like little hearts, are light, tremendously flaky and delicious. My husband was a bit skeptical about these cookies, but after one bite, he was hooked! If you don’t have the time and/or patience to make the vegan puff pastry (which I totally understand), find some vegan puff pastry at your grocery store.

Ingredients

1 - Vegan Puff Pastry sheet, pulled from fridge (if you are using store bought puff pastry, follow the manufacturers instructions on how-to thaw from the fridge)

Granulated Sugar

Take your vegan puff pastry and put on a heavily sugared board. Roll out pastry to 16in by 8 in. Sugar top of pastry evenly and well. Divide puff pastry in half, lengthwise. Roll long sides of pastry in towards mid line - 2 times. There should be some space between both rolled up sides. Then fold pastry in half, you should have a long log, and when looking sideways, it should look like a heart. Wrap up and put in fridge for 20 minutes.

Turn oven to 375 and put excess sugar into a small bowl. Cover a sheet pan with parchment paper or a silicone mat. Take cookie roll out of fridge and put onto cutting board. Cut 1/2 inch slices with a serrated knife, dip both sides into sugar and place onto sheet pan. You will have around 20 cookies.

Put cookies into oven and let bake anywhere from 10-12 minutes, take out of oven and flip cookies over, bake for another 10-12 minutes or until golden brown. Let the palmiers cool completely before eating, they will crisp up a lot after cooling. Good luck keeping these around your house for long!
