Espresso Granita
I wanted to continue show support to Black owned businesses, and after the big Starbucks debacle - I decided a week ago to support a coffee shop that not only produced great lattes and drinks but is a coffee roaster as well.
Red Bay Coffee has 2 shops and 1 van that serves the East Bay communities and also produced wonderful beans that it roasts themselves. I bought bag of freshly roasted beans for my espresso machine at home and decided to make a nice dessert from the beans.
Granita is a frozen dessert, it can be made out of fruit or like in this instance coffee or espresso. It’s really easy and if you have a freezer - then you are good to go! I topped my granita with freshly made whipped cream and some chocolate shavings. This recipe makes 4-6 servings, but if your serving more people, just double the recipe.
Ingredients
4 shots of Espresso or 1.5 cups of freshly brewed coffee
2-3 tbsp of sugar (depending on how sweet you like it)
1.25 cups of water if your not using coffee
1 tsp of vanilla extract
1.5 cups of heavy whipping cream, extra cold
3 tbsp of powdered sugar
chocolate semi-sweet for topping
Combine hot espresso with sugar or if using coffee - combine with sugar. Make sure sugar is dissolved before adding water to espresso mixture. Add in vanilla. In a tin cake pan or loaf pan (see my photo), pour espresso liquid. Put into freezer for 30-40 mins. Take out of freezer and using a fork, break up ice. Put back in freezer and repeat process every 30 minutes with fork 3-4 times until mixture resembles shaved ice.
Using stand mixer or hand mixer whisk cold cream on medium high/high speed until slightly thickened. Add in powdered sugar and then mix again until it resembles shaved cream. Don’t overtax or it will turn into butter curds.
Serve espresso granita with whipped cream and chocolate shavings. It’s a light dessert that I really enjoy that really hits the spot!!
