Fruit Popsicles
I’ve been wanting to make some popsicles for awhile, and I finally bit the bullet and bought a popsicle mold. I am so happy I did, these treats are way better than store-bought - and they are much more cost effective as well. I also love how you can control the sweetness, and the flavor combos are endless!!
This recipe makes 3 strawberry popsicles and 8 watermelon, just double or half the recipe if you want.
Ingredients Simple Syrup
1 cup sugar, granulated
1 cup water
vanilla bean (optional)
In a saucepan mix all ingredients and cook over medium heat for 15 minutes until sugar has dissolved and simple syrup thickens. Set aside to cool off, store in fridge till need to use.
Ingredients for Strawberry Popcicles
1 lb of Strawberries, washed and hulled
6 tbsp of simple syrup (you might need more or less, depending on taste)
pinch of salt
Place strawberries in blender or food processor and blend until pureed. Add in 3 tbsp of simple syrup. Taste to see if you need more sugar, add in more. add in pinch of salt and make sure to blend a couple of times to distribute sweetness. Put puree into popsicle molds and follow manufacturer instructions. Typically it just needs to freeze overnight.
Ingredients Watermelon Popsicles
*I used a whole watermelon, you don't need to make that much, its up to you.

Simple Syrup
Pinch of Salt
After I cubed the watermelon, I strained it to remove the seeds and thick pulp. I then cooked the watermelon juice in a stockpot for 30 minutes on medium heat so the juice could reduce and sweeten. Then I took 2 cups of the reduced liquid and added 1/4 cup of simple syrup and a pinch of salt. Remember to taste the juice before adding the sugar, just in case the fruit doesn’t need much sweetening. Pour cooled watermelon juice into molds and freeze overnight to make pops.
