Bruschetta
Here is a summertime favorite that easily comes together and only has a few ingredients. It’s a variation on the Italian classic, which is toasted bread rubbed with garlic and topped with olive oil and tomatoes. This variation you can make a day before and then serve the next day!
Ingredients
2 ripe tomatoes, chopped and seeded
2-3 cloves of garlic chopped
1/4 cup of basil chopped thinly
2 tbsp of olive oil or avocado oil
2 tbsp of balsamic vinegar
Salt and pepper to taste
Put all ingredients into a bowl mix gently with a spoon, taste for seasoning (you might want to add a little more vinegar or oil depending on your preference). Keep in fridge if not serving right away, but serve room temperature.
